So what's the deal with unprotected players when free agency opens up? Can we contact them when they're with another team?

Same as last year.

Unprotected just means they CAN sign with the SL if they want.  If they aren't on expiring deals they can choose to return to their team (see Shakers Lee and Blair Smith last season in Hollywood).

I didn't play last season so I'm not totally sure of the process and honestly, it's one of those things I've not really explored before.

Unless the player is going to be a free agent anyways, unprotected just means they Super League can sign them away from the FBL for next season.
