I have a hypothetical question: If a coach is on a 3 year, $9mil contract, how much does he have to pay the team to buy himself out of it? Or how much does another team have to pay in compensation if they poach him?

Nothing. He just leaves and the contracts is voided.

There is no compensation for poaching coaches.
